I made fried chicken for supper. You can too.
I will give you my secret for fresh, crispy fried chicken. My mother taught me to soak it in milk with about 1/3 cup of mayonnaise. Lightly coat the chicken with your flour, salt, pepper, and paprika. Make sure your grease is hot when you place the chicken in your pan. I use canola oil because it tastes much lighter. I cover the skillet with a lid and only turn the chicken one time. It should be turned when it becomes a golden brown. Keep your heat on medium. Once you have turned your chicken continue to keep it covered until the last few minutes, then leave the lid off to allow the final crisping to occur. I like to have mashed potatoes, green beans and macaroni and cheese to compliment the chicken. Now I know you may be thinking this is just too much trouble. Well, I promise you can whip this dinner up in about 30-45 minutes. It really is rewarding to make a good, hot meal, then sit down with your family for enjoyment. Make a deal. You cook the food and someone else cleans up the kitchen. I know it is so easy to eat out, and I like to eat out as well, but a little time in the kitchen can go along way with your pocketbook and your family. Go ahead. You can do it. Your family will love it.
